1/2 cup cooking oil
1/2 cup sugar
2 eggs
2 ripe bananas, mashed
2 cups self-rising flour
1 tsp. baking powder
1/2 tsp. baking soda
Cream oil and sugar together. Blend in eggs, one at a time. Add mashed bananas. Blend together the flour, baking powder, salt and baking soda. Add to mixture and blend well. Pour into greased rectangular terracotta cooking dish and cook in cool oven (approx. 350 degrees) for 30 minutes, or until a toothpick comes out clean
